Recovery Crepe, eggs, whole grains, and milk
To get perfect crepes, scoop them with a 1/3 cup measuring cup.
For added flavour spread lightly with almond butter.
MAKES: 8 CREPES
1 cup all purpose flour
1 cup whole wheat flour
8 large eggs
1/4 cup skim milk powder
1/2 cup unsweetened soy milk
8 tsp cooking oil
PREPARE THE BATTER
Mix all ingredients in a bowl until batter is smooth.
Heat a medium frying pan on medium high heat. Lightly coat the pan in a heat-stable oil.
Pour 1/3 cup of batter into pan and cook for approximately 2 minutes on each side until a golden brown colour is achieved.
