Razz Sport Muffins

Raspberry Muffin with Dark Chocolate


2 heaping cups oat flour (215 grams)
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
6 egg whites
3 bananas
1/3 cup cashew butter
4 tablespoons honey
1/2 cup of coarse chunks of dark chocolate bar [85% chopped] (66 g)
1 1/2 cups fresh raspberries
3/4 cup chopped walnuts

MAKES: 12 muffins


Preheat the oven to 325F

In a large bowl, mix together the oat flour, baking powder, salt, cinnamon, and vanilla. In another bowl, whisk the egg whites, bananas, cashew butter, and honey. Mix the wet ingredients with the dry ingredients until combined. Fold in the chunks of dark chocolate, raspberries, and walnuts. Divide the batter among the cups of a lightly oiled muffin pan.

Bake for 40 minutes until a skewer inserted into the center of a muffin comes out clean. Cool on a wire rack.
