Ingredients

375 g tofu
150 g (200 mL) oat groats
2 cups water
3/4 cup (130 g) drained black beans
3/4 cup (115 g) halved cherry tomatoes
2 tablespoons (20 g) onion [finely chopped]
1/2 ripe avocado chopped
1 medium jalapeno, minced
1 tablespoon (2.5 g) fresh cilantro [finely minced]

MAKES 3 BOWLS

Method

Bring the water to boil and add oat groats. Reduce heat and simmer uncovered about 45 minutes. Drain. Rinse beans and drain. Set aside.

Slice the cherry tomatoes in halves, chop the onion, chop the avocado, and mince the cilantro and jalapeno. Mix with the beans and oats. Cube the tofu and add it to bowl, either plain and uncooked or crisped in a non-stick pan.

Serve with dressing of choice.
