Fast Protein Pasta (a.k.a. meatless meatballs)


Ingredients

1 tablespoon ground flax seeds [mixed in 2 tablespoons water]
450 g extra firm tofu
1 tablespoon apple cider vinegar
1 teaspoon low sodium tamari
2 tablespoons olive oil
1 garlic clove minced
1/4 cup chopped onion
2 tablespoons parsley
3 tablespoons nutritional yeast
1/2 teaspoon salt
Black pepper
1/3 cup almond meal

Simplest Pasta Sauce
2 tablespoons olive oil
1/4 cup onion, chopped
2 cups tomato puree
2 basil leaves
1/4 teaspoon black pepper
Salt to taste

Don't forget the pasta!
280 g of any pasta

Method

MEATLESS MEATBALLS

Preheat the oven at 375F. Soak the ground flax seeds in the water, mix well, and let sit for 10 minutes.

Pulse the firm tofu in the food processor until it is crumbled evenly. Add the rest of the ingredients except the almond meal to the food processor bowl and pulse. Place the tofu mixture into a mixing bowl and mix in the almond meal by hand until evenly combined.

Form into 16 balls, bake in the oven for 35 minutes until crispy on the outside.

PASTA SAUCE & PASTA

Sautée the onions in the olive oil until translucent then add the tomato purée and spices to taste.

Cook pasta in a large pot of boiling water on high for 7 to 10 minutes.
